Pumpkin White Chocolate Cookies

1 c. sugar
1 tsp. vanilla
1 c. canned pumpkin
1 c. white chocolate chips
1/2 c. chopped nuts (optional)
1 tsp. baking soda
1 tsp. baking powder
1 tsp. cinnamon (or pumpkin pie spice)
2 c. flour

Beat the sugar, vanilla, and pumpkin until well blended. Add the chocolate chips and nuts. Sift together the baking soda, baking powder, cinnamon, and flour. Add to the pumpkin mixture and blend well. Drop by teaspoonfuls onto GREASED cookie sheet. Bake at 375 for 8-10 minutes. Let cool a couple minutes on the cookie sheet, then remove to a wire rack.
