Pumpkin Empanadas

(This was orginally a recipe for Sweet Potatoe Empanadas, but I made a few changes and made it my own!  I think they turned out GREAT!)

Ingredients
  • 1/2 cup pumpkin  (just pumpkin, not a pie mix)
  • 1/4 cup cream cheese, softened
  • 1 Tbsp brown sugar
  • salt
  • 1 tube refrigerated ready-made cresent roll dough
  • 1/3 cup sugar
  • 2 tsp ground cinnamon
  • 1 tsp ground nutmeg
  • 1/4 cup butter, melted
Directions

Preheat oven to 350 degrees F.
In a small bowl, mix the pumpkin with the cream cheese, brown sugar, and a pinch of salt until creamy.  Remove the dough from the tube and separate into 4 rectangles.  Working with one rectangle at a time, squish the perforated seam to seal the two large triangles together.  Cut the rectangle in half, making two smaller rectangles/squares.  Place a heaping teaspoon of the pumpkin filling in the center of the two small rectangles.  Fold the dough in half, and pinch the endges to seal.  (If the dough has gotten too dry to seal, use a tiny bit of water on the edges to seal)

Make all 8 empanadas with the rest of the dough.  Place the rectangles on a baking sheet lined with parchment paper or foil and put into the preheated oven.  Bake until golden, about 10-12 minutes.  Meanwhile, in a shallow bowl, mix together the sugar, cinnamon, nugmeg, and a pinch of salt.  While still warm, brush the empanadas with melted butter, and then gently toss in the sugar mixture.

Pumpkin Chocolate Chip Cookies

PUMPKIN CHOCOLATE CHIP COOKIES 

1 c. pumpkin
1 c. sugar
1/2 c. oil
1 egg, slightly beaten
2 c. flour
2 tsp. baking powder
1 tsp. cinnamon
1/2 tsp. salt
1 tsp. baking soda dissolved in 1 tbsp. milk
1 c. semi-sweet chocolate chips
1/2 c. nuts
1 tsp. vanilla

* I add 1/2tsp of ground nutmeg *

Combine pumpkin, sugar, oil and stir together dry ingredients and add to pumpkin mixture with dissolved soda and mix well. Stir in chips and vanilla. Drop by teaspoonful on greased cookie sheet and bake 10 to 12 minutes at 375 degrees. Makes 5 dozen

Pumpkin Spice Cake

This works with pretty much ANY cake mix, but since it's FALL, I'm going the obvious route. :-)

1 box spice cake mix
1 (15 oz) can pumpkin

Mix until well blended, pour into a 9x13 pan. Bake 28 minutes at 350.

Variation: Use a box of devil's food cake mix and add 1 cup chocolate chips, bake in muffin tins according to cupcake instructions on box.

Creamy Curried Pumpkin Soup

* 1 Tbsp. olive oil
* 1 small onion, finely chopped
* 1 can (29 oz.) pumpkin
* 2 cups vegetable broth/you can also use chicken broth
* 2 cups water 
* 3 Tbsp. brown sugar
* 3/4 tsp. curry powder or paste
* 1/2 tsp. salt
* 4 oz. (1/2 of 8-oz. pkg.) Cream Cheese, cubed

HEAT oil in large saucepan on medium heat. Add onion; cook and stir 3 min. or until crisp-tender. STIR in remaining ingredients except cream cheese until well blended. Bring to boil. Reduce heat to medium-low. ADD cream cheese; cook until cream cheese is completely melted and mixture is well blended, beating constantly with wire whisk.


**This recipe does come out a little thick,I like it that way but you can always adjust..just an FYI


**I also added some fresh corn (uncooked from the cob) to the soup today & it was delish! Enjoy!

Pumpkin Wheat Honey Muffins

I got the recipe from this link, but tweaked it a little:

Here are the ingredients I used (the rest of the instructions are the same)-

1 1/2 cups whole wheat flour
1/2 cup packed brown sugar (I used dark)
1 tsp ground cinnamon
1/2 tsp ground ginger
1/4 tsp ground nutmeg
1/4 tsp ground cloves
3/4 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
2 eggs
1 cup canned pumpkin puree
1/2 cup vegetable oil
1/2 cup honey

I did have to cook them a little longer, maybe 3 extra minutes, due to the added pumpkin. 

I didn't use raisins or walnuts, but I'm sure it would be good if you like that sort of thing. Chocolate chips would also be good, especially if you need a bribe to get your kids to eat them!

Pumpkin Pancakes

2 1/2 c. pancake mix
3 tbsp. brown sugar
1 tsp. cinnamon
1/2 tsp. ginger
1/2 tsp. nutmeg
1/8 tsp. ground cloves
1 egg
1 3/4 c. milk
2 tbsp. veg. oil
2 tbsp. vinegar
1 c. pumpkin puree

Combine the first six ingredients together in a small bowl. In a larger bowl, combine the last 5 ingredients, then add the dry ingredients to the wet ingredients. Mix just until combined. Use 1/4 c. batter for each pancake-- pour onto a griddle, spread the batter around a little bit, then cook like you would regular pancakes.
Makes about 12 pancakes.

Pumpkin White Chocolate Cookies

1 c. sugar
1 tsp. vanilla
1 c. canned pumpkin
1 c. white chocolate chips
1/2 c. chopped nuts (optional)
1 tsp. baking soda
1 tsp. baking powder
1 tsp. cinnamon (or pumpkin pie spice)
2 c. flour

Beat the sugar, vanilla, and pumpkin until well blended. Add the chocolate chips and nuts. Sift together the baking soda, baking powder, cinnamon, and flour. Add to the pumpkin mixture and blend well. Drop by teaspoonfuls onto GREASED cookie sheet. Bake at 375 for 8-10 minutes. Let cool a couple minutes on the cookie sheet, then remove to a wire rack.
