Fettucine Alfredo with Spinach Meatballs

Meatballs:
1 lb hamburger
10oz frozen spinach, thawed & drained
1 egg
1/2 c. bread crumbs
salt
pepper

Mix all ingredients; roll into balls. Fry or bake until cooked thoroughly. Drain grease.


Pasta:
1 package fettuccine noodles
1 stick butter
1 c. heavy cream
3/4 c. grated parmesan

Cook noodles as instructed on package. Drain and return to pan. Add remaining ingredients and toss over low heat until butter is melted. Add meatballs.

Spinach and Ricotta Stuffed Shells

20 jumbo pasta shells (about half a 12 oz box)
1 24oz jar marinara sauce
2 15oz containers ricotta
2 cups baby spinach, chopped
1/2 cup grated parmesan
salt & pepper
1 cup grated mozzarella (I used shredded, and probably only 1/2 cup)

-Set oven rack to the highest position and heat oven to 400. Cook the pasta according to the package directions; drain and run under cold water until cool.

-Spread the marinara sauce in the bottom of a large broilerproof baking dish.

-In a bowl, combine the ricotta, spinach, parmesan, 1/2 tsp salt, and 1/4 tsp pepper. Spoon the mixture into the shells and place them on top of the sauce. Sprinkle with the mozzarella and bake until the shells are heated through, 10 to 12 minutes.

-Increase the beat to broil. Broil the shells until the cheese begins to brown, 2 to 5 minutes.

Cheeseburger Salad

1 package pre-washed spinach
About 1lb of cooked, sliced beef (like leftover London broil or sliced steak)
1 tomato, sliced
1 onion, thinly sliced (for a change, use grilled onions!)
Shredded Cheddar cheese
Real Bacon bits 
1 Bottle of French Dressing, pour into a separate bowl
8 Tblsp Regular mustard, mix with French Dressing--this is like the Ketchup & Mustard

Place spinach into large salad bowl (a punch bowl works well, too)
Add the tomatoes, onions and cheese
Mix well

Separate salad into portions (4 as a side salad, or 2 as a dinner salad)

Top each portion with beef, bacon bits and as much dressing as you desire (about 2Tblsp for a side, and about 3Tblsp for a dinner)
